Our beloved return guest Josie Long is hosting a big Christmas gathering and needs some batched cocktail ideas for what to serve.
To serve hot, add the cognac and rum to a Toddy glass and top with the Wassail Batch. Garnish with apple slices or fresh cranberries. To serve cold, add all the ingredients to a shaker and fill with ice. Shake, and strain into a chilled cocktail glass.
1 qt Organic apple cider
2 cups Unsweetened pomegranate juice
.25 cup Sugar
1 cup Fresh orange juice
.75 cup Fresh lemon juice
3 Cinnamon sticks
1 tsp Whole cloves
1 tsp Whole allspice
Combine all the ingredients in a saucepan and bring to a simmer over medium-low heat. Cook for at least 1 hour, stirring occasionally.
Rosemary Citrus Spritzer
makes 10 to 12 drinks
4 (4-inch) sprigs fresh rosemary
3/4 cups sugar
1/4 cup honey
Rosemary and lemon for garnish (optional)
Peel off thick strips of zest from 1 lemon.
Juice the lemons and oranges into a liquid measuring cup – you should have about 1 cup of juice. Top off with water if necessary to make 1 cup.
Combine zest, juice, rosemary, sugar, and honey in a saucepan over medium heat. Boil for 1 minute, stirring constantly to dissolve the sugars.
Remove from heat and let sit 10 minutes. Strain, discard solids, and let syrup cool completely.
To serve, fill an 8-ounce glass halfway with ice cubes, add 2-3 tablespoons syrup, fill with soda water, and stir. Garnish with rosemary sprigs and/or lemon slices, if desired.
• Use 1 cup lemon juice and omit oranges.
• Use 1 cup sugar and omit honey.
• Add a splash of gin or vodka to the glass.
To a heatproof mug, coconut milk, milk and hot chocolate powder to taste. Stir to mix and microwave for 1 minute, or until almost boiling. Add 1.5 oz rum and stir to mix. Top with whipped cream and shaved coconut.
Combine ingredients in blender and store in a glass bottle in fridge for a few hours. Top with nutmeg or cinnamon to serve.
1.5 oz Prosecco
1 rosemary sprig
.75 oz sloe gin
.75 oz cherry brandy
Fill a coupe glass with crushed ice and pour over the Prosecco. Hold the rosemary sprig in the palm of your hand and clap the other hand sharply over it to lightly bruise the leaves before dropping it into the glass. Slowly pour the sloe gin and cherry brandy into the glass so that they sink to the bottom. Serve immediately.
